Kara’s Protein Ball Recipe

1 cup nut butter
1/4 cup unsweetened shredded coconut (feel free to skip this)
1/2 cup oats
1/4 cup chocolate chips (we like the mini ones)
2 tbsp maple syrup
2 tbsp ground flax seeds
1/2 tsp maple syrup
1/4 tsp sea salt
Mix ingredients in a large bowl. Roll into balls (wet hands help with stickiness). Store in the fridge.

    Cait, I am inspired by your meal planning format that you shared for dinners. I am really curious as to what your lunch routine is?

      It’s not that exciting 🙂 If we are out, we do sandwiches typically. Or leftovers. If I am home, we might do a tray of assorted healthy choices and have them pick. Soup is a frequent flyer here in the fall. Breakfast for lunch is a favorite. Veggie burgers, salads with lots of toppings. Just whatever we have on hand that is easy and nutritious.
